不二製油's plant-based milk fermentation ingredient “DEALI®” is introduced as creating new aromas and a new mouthfeel in confectionery, with details provided on how the series launched in April is being used in practice. At a presentation in September, 2 top pastry chefs gave demonstrations showing specific applications.
As demand for sustainable confectionery grows, 不二製油 has launched “DEALI®”, a new ingredient made by fermenting plant-based milk, in preparation for a shortage of dairy products in Japan. This report focuses on its positioning as an ingredient for the confectionery industry and how it is used in practice. At the product presentation held on 25 September, 2 top pastry chefs demonstrated products made with “DEALI”, alongside a tasting of the ingredient itself.
“DEALI” is made by adding a proprietary fermentation process to plant-based milk pressed in-house, producing a natural fermented aroma and richness while retaining properties similar to butter. Its ability to make use of the raw material's aroma without masking it was emphasised, and the ingredient is also said to support the development of derivative products such as aroma-boosting cream.
