cotta and FUJI OIL held a Tokyo event showcasing the plant-based milk fermentation ingredient “DEALI,” where Chef Hatakeyama and Chef Eguchi demonstrated Western-style confectionery made with DEALI.
cotta, which operates one of Japan’s largest e-commerce sites for making confectionery and bread, and FUJI OIL jointly held an experiential event in Tokyo to showcase the appeal of the plant-based milk fermentation ingredient “DEALI.” Chefs Kazuya Hatakeyama (畠山 和也) and Kazuaki Eguchi (江口 和明) were invited as lecturers, and demonstrations, tastings and displays of Western-style confectionery made with DEALI were presented.
DEALI is an ingredient that combines fermentation technology with rich plant-based milk manufactured in-house. It was described as delivering both the richness of dairy products and a refreshing finish. The lineup consists of three types: DEALI Fresh (requires refrigeration), DEALI Bright and DEALI Creamy. The products are supplied not only for confectionery applications but also to processed food manufacturers, and are available through cotta’s e-commerce site.
In the demonstration, Chef Hatakeyama presented a lemon cake made with DEALI Bright, while DEALI Creamy was used in chocolate cream puffs. Participants experienced DEALI’s milky quality and its ability to enhance the other ingredients.
