“Gion Inari Sushi,” a specialty of Ito, Shizuoka Prefecture, resumed sales after Gion, the long-established bento shop, closed in 2025 and FJネクストホールディングス took over the business. Under the new structure, former employees were rehired, and repeated trial production was carried out while maintaining the original recipes.
Operations resumed at 9:00 a.m. on 29 October. Residents who had been awaiting the reopening came to the shop one after another and continued making purchases. Some customers expressed their delight at the return of a flavor they had enjoyed for many years.
The 430 boxes of inari sushi bento prepared on the 29th sold out at around 11:20 a.m. Employees described the difficulty of adjusting the cooking time and flavor and proceeded carefully with the recreation process.
