こととや has launched two Japanese dashi products, “Premium Bonito Dashi” and “Flying Fish Dashi,” made with domestic ingredients, offering an easy way to add authentic aroma and umami to everyday cooking.
こととや, the food specialty retailer operated by エステールホールディングス, is launching a new range of Japanese dashi made with domestic ingredients. Designed as dashi packs that produce ready-to-use stock simply by simmering, the products are characterized by their use of the ingredients’ natural flavors.
“こととや Daily Dashi: Premium Bonito Dashi” uses 5 ingredients, centered on dried bonito made in Kagoshima Prefecture, along with dried sardines, dried mackerel, dried sardine flakes and kelp. Emphasis is placed on a rich aroma and clean flavor, and the product is offered unsalted so that seasoning can be added separately.
“こととや Daily Dashi: Flying Fish Dashi” combines bonito flakes made in Yaizu, round herring, aged mackerel flakes, roasted flying fish, shiitake mushrooms and kelp. It is designed as a versatile dashi that layers the roasted flying fish’s savory aroma with the umami of multiple ingredients. It is seasoned and can also be used as-is to make stock for hot pots.
