To support recovery and reconstruction following the Kumamoto earthquake, advance sales of Momotaro Salmon will be held at the GENKI SUSHI × Uobei Ueno store, with all sales from the eligible menu donated to Yatsushiro City, Kumamoto Prefecture.
Through a collaboration between Genki Global Dining Concepts and 有限会社ひらやま, Momotaro Salmon will be offered exclusively at the GENKI SUSHI × Uobei Ueno store on 3 and 4 October 2026. Sales will be limited in quantity, and all proceeds will be donated to Yatsushiro City.
Momotaro Salmon is a wholly domestically produced salmon raised in Kumamoto’s natural groundwater, distinguished by its vaccine-free and hormone-free production. Land-based aquaculture avoids red tide damage, while specially formulated feed supports gut health. The salmon is described as having pronounced sweetness and umami, along with an attractive coloration.
As part of support for reconstruction, the companies will pursue initiatives that contribute to the recovery and reconstruction of affected areas. Proceeds from the advance sales will be donated to Yatsushiro City, with the aim of expanding the aquaculture system and achieving a stable supply.
The future vision for the collaboration calls for expanding aquaculture capacity and increasing the proportion of domestic raw materials. Capacity will be expanded from the initial 36 tanks to 55 tanks, with the goal of reaching approximately 1,000 tanks and annual production of up to 1,000 tonnes over 7 years.
