GENKI GDC will offer sushi made with farmed salmon for 2 days only in Yatsushiro, Kumamoto Prefecture. All proceeds will be donated to Yatsushiro City. Approximately 30 kilograms will be sold, with 8 products made using Momotaro Salmon.
GENKI Global Dining Concepts (GENKI GDC), in collaboration with Hirayama, a farm operator in Yatsushiro, Kumamoto Prefecture, will sell sushi made with farmed salmon in Yatsushiro from 3 to 4 October to support the farm, which was damaged in the Kumamoto Earthquake. All sales proceeds will be donated to Yatsushiro City.
The products will include 8 types served at the GENKI SUSHI × Uobei Ueno location in Ueno, Tokyo, including Salmon Mayo and Salmon with Green Onion and Chili Oil. Total sales volume for the 2 days is expected to be approximately 30 kilograms, and sales will end when supplies run out.
Hirayama farms the salmon on land in an environment less susceptible to red tide, including through the use of natural groundwater. The salmon are raised without vaccines or hormones, and the company also emphasizes its use of feed containing lactic acid bacteria.
Looking ahead, the company plans to expand its current 55-tank farming facility to 1,000 tanks over 7 years in preparation for full-scale shipments, targeting an annual production capacity of up to 1,000 tonnes. The damage caused by the earthquake was limited, and the company has stated that it will not affect the full-scale shipment plan for the joint operation.
