Kappa Sushi is collaborating with Nagano City to offer menu items made with grapes and apples from Nagano City starting in October. The new items, including salad gunkan sushi, will be introduced as part of the Nagano City Fair.
Kappa Sushi, a conveyor-belt sushi chain, is working with Nagano City to hold a fair from October featuring agricultural products from the city where it was founded. The lineup will include products made with grapes and apples from Nagano City, as well as dessert items featuring local dishes and fruit.
The first phase is scheduled to begin on 1 October, with a parfait made using Nagano City’s Queen Rouge and Shine Muscat grapes, along with menu items featuring the local dish shōyu-mame. The second phase starts on 22 October and includes sushi collaboration items using apples, as well as sushi topped with roast duck or shrimp tempura and served with Fuji apple mayonnaise sauce.
A menu item using the same apple sauce has also been developed for salad gunkan sushi. Nagano City Mayor Kenji Ogihara and Kappa Create President Gō Yamakado attended the event and emphasized the initiative’s aim of giving back to the city where the company was founded, while explaining that the campaign seeks to showcase the appeal of Nagano City’s agricultural products nationwide.
The mayor of Nagano City praised the apples for their crisp texture and balance of sweetness and acidity, and said he looked forward to the taste of the collaboration. Kappa Sushi also aims to communicate its ties with Nagano City and its sustainability initiatives through its products.
