The homemade scallion oil that provides the dish’s distinctive flavor recreates a handmade process in which fresh scallions, garlic, ginger and chili peppers are extracted at low temperature without scorching. No colorants, flavorings or preservatives are used, allowing the aroma and umami of the ingredients to come through.
Watanabe Ginji (渡辺銀次) emphasizes a flavor profile focused on the umami of vegetables and says the product balances savoriness with versatility. “Gin no Negi Abura” is described as suitable for all kinds of Japanese, Western and Chinese dishes.
The product has a net content of 180 g and a suggested retail price of ¥1,058 (including tax). The distributor is 株式会社アイケイ and the manufacturer is 太田油脂株式会社.
