A dedicated rice-flour bread plant in Tainai, Niigata Prefecture, has begun operations, running a spiral cooling conveyor measuring 6 meters in height and 180 meters in total length. A plan has been announced to produce 850 tonnes of bread annually by 2025 at 3 plants centered on Tainai, a group company of Kameda Seika.
One of Japan’s largest dedicated rice-flour bread plants is located in Tainai, Niigata Prefecture, and has been operating since 2024. With 3 plants operating as a combined network, annual production is expected to reach 850 tonnes by 2025, with further expansion possible by extending operating hours.
The rice flour used at the plants is sourced almost entirely from Niigata Prefecture. The challenge of maintaining the rise of gluten-free rice-flour bread has been addressed through a proprietary process using finely milled rice flour. The result is a chewy texture and the sweetness of rice.
President Takahashi Hajime (高橋 肇) said that the industrial-scale production of gluten-free bread is rare anywhere in the world. Rice-flour bread originating in Niigata is attracting attention as a potential contributor to the expansion of the industry.
