The Tokamachi City Official Kitchen has launched on Cookpad, publishing healthy recipes devised and supervised by the city's registered dietitians. It will also share recipes useful for everyday meal planning, including disaster-preparedness meals and reduced-sodium dishes.
Tokamachi City has launched an official kitchen on Cookpad, Japan's largest recipe posting and search site. The city plans to promote food education and healthy living among residents by providing nutritionally balanced recipes, with supervision handled by 4 of the city's registered dietitians.
One recipe featured is "Ketchup Ginger Pork," which explains how to halve the usual amounts of soy sauce and sugar while using the acidity of ketchup to reduce the dish's greasiness.
Tokamachi City launched its official kitchen in October, making it the sixth municipality in the prefecture and the first in the Uonuma area to do so. Going forward, it will post new recipes on the 19th of each month, Food Education Day, focusing on disaster-preparedness meals useful in emergencies, reduced-sodium dishes and gut health.
Color coding is provided below each listed dish to help users put together a full menu, and searches can be narrowed using keywords such as "healthy," "easy" and "children." A total of 28 recipes are currently listed, with 2 to 3 more scheduled to be added each month.
A representative of Tokamachi City's Health Promotion Division said the city is developing menus that take calories and reduced sodium into account from the perspective of registered dietitians, and indicated that it also intends to expand its use of ingredients from Tokamachi.
