光英科学研究所 comprehensively analysed the components contained in its lactic acid bacteria-derived substance and identified a total of 1,186 components. The data is scheduled to be released and presented at the Food Development Exhibition in October 2026.
光英科学研究所 conducted a new metabolome analysis of its “lactic acid bacteria-derived substance,” manufactured through the co-culture of 16 types and 35 strains of beneficial bacteria, including lactic acid bacteria and bifidobacteria, and identified 1,186 components it contains. The previous figure was 352 components, so the scope of component identification has expanded approximately threefold, while improvements in analytical technology and accuracy have also enabled the detection of previously unknown components.
The concentrated liquid of lactic acid bacteria-fermented soymilk contained 1,075 components, the powdered raw material “FF16” contained 1,117, and the extract raw material “S solution” contained 900. These were integrated after accounting for differences in processing methods. The previous record of 352 components, comprising 235 water-soluble and 117 fat-soluble components, has been surpassed by this analysis.
The components detected in the concentrated liquid comprised 129 amino acids, 170 organic acids, 58 polyphenols, 47 nucleic-acid-related components, 20 vitamins and 651 other components. The number of functional ingredients was reported as 102 in the concentrated liquid, 113 in FF16 and 94 in the S solution. Functional classifications organise components associated with multiple functions, including memory, blood glucose levels, bones, visceral fat and muscle maintenance.
Going forward, the data obtained will be used for research into the lactic acid bacteria-derived substance, materials development and proposals for raw materials, while discoveries such as trilinolein among the lipid components, as well as patent applications and academic presentations, will also be pursued. At Food Development Exhibition 2026, presentation seminars are scheduled to be held daily, offering visitors the latest data and proposals regarding the material’s potential.
