原信・ナルス, part of Axial Retailing, has launched Echigo miso aged in cedar vats. Made with soybeans and rice produced in Niigata Prefecture, the 300g product, featuring the characteristics of wooden-vat aging, is being sold at ¥398 excluding tax.
原信・ナルス has launched “Echigo Miso Made in Wooden Vats,” a new product under its ethical brand Hana-well. Cedar vats are used for the fermentation and aging process, and the product will be sold at 原信・ナルス stores.
The miso uses rice koji at a ratio of 85%, with sweetness and umami derived from the rice and soybeans described as its defining characteristics. The use of cedar vats recreates a traditional fermentation environment.
Yeasts and lactic acid bacteria that have established themselves in the vats as native microorganisms are said to promote gradual fermentation, producing a rich depth of flavor and a fermented aroma. The product weighs 300 grams and has a regular price of ¥398 excluding tax. It will be sold at 原信・ナルス stores.
