KonoMachi Cafe Souri, located in Ume-no-Yakata, a public facility in Chita, installed a hydrogen griller and hydrogen stove and began demonstration operations as part of the Low-Carbon Hydrogen Model Town Demonstration Project.
The cafe plans to offer healthy grilled chicken plates and grilled vegetable plates as hydrogen menu items from 9 October 2026 (Friday). The cafe will continue normal operations and aims to provide an opportunity for customers to become familiar with hydrogen.
Hydrogen cooking is said to use steam generated when hydrogen burns to retain moisture and flavour in the ingredients, producing a crisp exterior and a light, juicy interior. Replacing the energy used for cooking with hydrogen is expected to reduce CO2 emissions.
