“GLUTENLESS SELECT,” a semi-dried pasta from Sendai with approximately 80% less gluten, is scheduled for online launch in January 2027. Early servings and advance reservations will begin at a Sendai event on 10/31 and 11/1.
The product is being developed using a combination of a newly designed proportion of wheat-derived ingredients and a production method intended to reduce gluten, with the aim of matching the taste of conventional 100% wheat pasta. The theoretical reduction rate is approximately 80%, and a patent application was filed in September 2026. Production is scheduled to be outsourced to a noodle manufacturer in Miyagi Prefecture.
The product will be served for the first time at “Asuto Tsunagaru Guriri Park,” to be held in Asuto Nagamachi, Taihaku-ku, Sendai, on 31 October and 1 November, with advance reservations opening on the same dates. At the venue, the pasta will be prepared and sold by Italian chef Mirko Giacometti, one dish at a time, using 2 sauces provided by Shoki Fujita (藤田 承紀), who supervised the sauces.
The product was brought to Roberto Pachulo (ロベルト・パチュロ), owner-chef of the New York restaurant “Roberto’s.” After preparing it himself, he evaluated it as follows: “It tastes no different from conventional 100% wheat pasta.” Pachulo prepared 4 types of noodles and evaluated them in dishes including carbonara.
Regarding the method used to evaluate gluten reduction, it was explained that, because the current measurement method is based on the amount of gliadin, no established indicator measures the gluten network that actually forms. The reduction attributable to the production method is not included in the current standard, and plans were presented to consult with universities and research institutions going forward.
Under the sales outline, pasta dishes will be sold and advance reservations accepted at the event venue on 31 October and 1 November, and sales of the noodles are scheduled to begin in the online store in January 2027. Net content is 240g (120g × 2 packs), storage is at 10°C or below, production will be handled by a noodle manufacturer in Miyagi Prefecture, and sales will be handled by トリニティエナジー’s Food Business Division.
