「In addition, Yonjuhachi Gy場, which pursues the sustainability of seafood consumption, participated with Saga fishermen in “Kodomo to Tsukuru Tabemonogatari in Saga,” an event offering “Dream Menus” in which companies turn children's ideas into reality. Yonjuhachi Gy場 proposed a way to serve fish without generating food waste, “One Fish, Two Delicious Preparations,” in which one fish is served using 2 cooking methods, and also served Saga's underused fish, Igo, to local residents. Yonjuhachi Gy場 calls the latent food value of underused fish and other species “food potential.” By using cooking techniques and methods to transform fish that would previously have been discarded into delicious food and by promoting new appeal in food, the brand will use limited marine resources and contribute to creating a sustainable future for seafood consumption.」
Moving beyond general references to food waste and environmental issues, the Company has for the first time described concrete initiatives to promote sustainable seafood through the use of underused fish, a system for serving one fish in 2 cooking methods, and collaboration with fishermen and local communities.
